I'd go for HP for servers and printers, and Cisco for switches. Proliant servers, Catalyst switches, and HP Printers. If you can't afford Catalysts in all layers then you should use Procurves as access switches.)

They are good quality, and affordable choices.

The switches, and printers should be located in a central room at every floor, or something similar (If it's possible,

I'd make an optical backbone of redundant 10 G Ethernet interfaces. The server switches should join the core switches with a 10 G interface as well.

The core switches should be Layer 3 switches (I'd choose Cisco 6xxx series), the access switches should be Layer 2 switches. The server farm switches should be a load-balancing switch (if load balancing , and server redundancy is required).

Printer types should be decided, based on detailed requirements, as well as softwares.(if you have drawings of the building pls. let me know), In case you need a more specific design - let's discuss it in an email:crys1000@gmail.com.
